Almond butter glazed chocolate chip banana bread scones…now there’s a mouthful. Literally and figuratively! Not funny? Ok, fair enough.
All joking aside, these scones really are tasty. The scones include my favorite flavors – almond butter, chocolate and bananas. It’s a classic combination that I can’t get enough of! For the past few weeks, I’ve been craving chocolate with either almond butter and peanut butter. It’s so good! So these scones were the latest way to satisfy that craving.
I made these scones over the weekend, which was super dreary. Scones made a gloomy weekend so much better! Plus, once they were paired with coffee, I was in heaven.
Now, I don’t have a ton to write today, but I think these scones speak for themselves. I hope you enjoy them too!
Almond Butter Glazed Chocolate Chip Banana Bread Scones
- 1 1/ 2 cups whole wheat flour
- 1 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teasoon salt
- 2 tablespoons cold unsalted butter cubed
- 1/4 cup plain Greek yogurt
- 1 banana mashed
- 3 tablespoons maple syrup
- 3 tablespoons coconut milk
- 1 teaspoon vanilla extract
- 1/4 cup dark chocolate chips
- 2 tablespoons almond butter
- 1 tablespoon coconut oil
Preheat the oven to 425. Prep a large baking sheet and set aside.
In a large bowl, combine flour, baking powder, cinnamon and salt. Whisk to combine.
Cut the butter into the flour mix using a pastry cutter until the mix is sandy.
Next, add in the yogurt, mashed banana, maple syrup, coconut milk and vanilla extract. Mix until just combined. Add in the chocolate chips and stir until just incorporated.
Transfer the dough to the baking sheet and form into a large disk that is about 1/2 thick. Cut the dough into 8 even wedges. Bake for 20-25 minutes, or until a browned.
Meanwhile, make the glaze. Add the almond butter and coconut oil to a microwave safe bowl. Microwave for 1 minute, stirring every 20 seconds or so, until the mix is completely melted.
Once the scones have baked, remove the oven and immediately top with glaze. Allow to cool before serving.
