Bud and I have started making all of our meals for the week on Sundays. Usually, we go through about three full meals a week because we eat so many leftovers. We save eating out for the weekends. This past week, I had a few days off so I menu planned and went grocery shopping earlier than usual. Which meant I made even more food than usual!
While I was searching for recipes on Pinterest, I stumbled upon this recipe from brown butter gnocchi. It sounded like the perfect meal for me and Bud. It’s so easy to put together. Only eight ingredients make up this brown butter gnocchi with kale and I bet you have most of them in your kitchen.
The initial recipe called for spinach, but opted for kale since it’s in season. Gnocchi cook up extremely quickly so this recipe comes together in less than 30 minutes. The browned butter and pine nuts add a really deep flavor to the dish as a whole. Add a sprinkle of Parmesean and curl up with a glass of wine for a wonderful meal!
Brown Butter Gnocchi with Kale
- 1 ounce package gnocchi 16-
- 2 tablespoons butter
- 2 tablespoons pine nuts
- 2 cloves garlic minced
- 1 bunch of kale washed and chopped
- salt and pepper to taste
- 1/4 cup shredded Parmesan cheese
Bring a small pot of water to a boil and cook gnocchi according to package directions.
In a large nonstick skillet, melt butter over medium heat. Add pine nuts to the pan and cook until slightly browned. Add garlic to the pan and cook for 1 minute.
Once gnocchi is cooked and drained, add to pan. Add kale to pan and cook until wilted. Season with salt and pepper. Sprinkle with Parmesean cheese.
