It’s almost Labor Day and that means it’s hatch chile season! I’m taking one of my favorite peppers to make a spicy and light hatch chile corn salad that’s perfect for your backyard BBQ this weekend.
I have mixed feelings about summer being over. On the one hand, I’m excited for the fall and all that comes with the new season. Cooler weather, football and holidays are nothing to complain about! On the other hand though, there’s just something special about summer. The whole season has a more relaxed attitude and approach. Each year when summer passes I feel nostalgic. I miss the season of pools and popsicles and shorts. Luckily, we’ve got one last weekend to savor the summer. Somehow, Labor Day is already upon us and I’ve got a great recipe to share with you today!
It’s hatch chile season in Texas, which means that hatch chiles are everywhere. Literally, everything is hatch chile flavored – chips, chicken, salsa, and soup! I wouldn’t be surprised if I start to hatch chile flavored pancakes. I have to say though that I look forward to hatch chile season all year.
Hatch chiles are fairly mild on the spice scale, but still give recipes a good kick. I tend to like raw hatch chiles because they have a good crunch and subtle heat. Typically, I’ll use them to top tacos or fajitas. But I have to say, this hatch chile corn salad is a fabulous way to enjoy the flavor of the peppers!
If you’re looking for a last minute recipe for Labor Day, this is the one for you! Hatch chile corn salad requires minimal ingredients and comes together in about 15 minutes. If you’re cooking for a crowd, this is also a super easy recipe to double or even triple! Hatch chile corn salad makes great for leftovers as well. The more the salad marinates in the lime juice, the better it gets!
I plan to savor summer this week as much as I can and hatch chile corn salad is absolutely a part of that plan.
Hatch Chile Corn Salad
- 5 ears of corn
- 1 red pepper diced
- 1 hatch chili pepper diced
- 1/2 cup feta cheese
- 1 teaspoon cumin
- 1/4 cup fresh lime juice
- salt and pepper
Begin by removing the husks from the ears of corn and cleaning the out the corn silk. Cut the kernels off each ear of corn.
Add the red pepper and hatch chili pepper to the corn. Add in the feta. Give the mix a good stir to combine.
Top the corn mixture with cumin, lime juice and salt and pepper. Mix again to combine. Adjust seasoning as necessary and serve.
