I think I could get used to this whole fall weather thing. It’s been cool mornings and bright blue skies for the past week here in NYC. The leaves are changing colors too! I know I’ll be singing a different tune in a couple months when winter hits. I’m a Floridian/Texas – winter is going to be a whole new ball game for me. In the meantime, I’m reveling in the season that is fall.
Because I’ve loved fall so much, I’ve been cooking with all the fall flavors lately. And although I’m one of those people who can eat soup year round, fall is particularly great for soup weather. This slow cooker butternut squash carrot soup is no exception! As per usual, I love this recipe because the slow cooker does all the work. The only things required a little bit of knife work and a blender to make the soup nice and smooth. And just look at the color of this soup – isn’t it beautiful!!?
Bud and I gobbled this soup up real quickly this week. I love the combination of the paprika and cinnamon. The carrots add a touch of sweetness to the soup without making it too sweet. And the coconut milk makes the soup so creamy and decadent. I realized that I actually got rid of our immersion blender in the move, but the blender did just fine making this soup smooth. I’m sure a food processor would do the same!
For the next few weeks, I’ll continue to enjoy the fall weather. Check back in with me when winter hits. Maybe slow cooker butternut squash carrot soup will be the solution?
Slow Cooker Butternut Squash Carrot Soup
- 1 large butternut squash cubed
- 6-8 large whole carrots peeled and diced
- 1 small onion diced
- 2 cups vegetable broth
- 1/2 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1 pinch salt and pepper
- 1 cup coconut milk
Add squash, carrots, onion, vegetable broth and spices to slow cooker. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Once the veggies have cooked and are tender, stir in coconut milk. Either blend the soup in a blender or use an immersion blender to blend the soup until smooth.
Add favorite toppings and serve!
