If you can’t tell, I’m on something of a slow cooker kick lately. A few weeks ago, I posted a butternut squash soup and now I’ve got another great, easy slow cooker recipe for y’all! I saw the original recipe in Closet Cooking, but tweaked it a bit.
Bud and I work full time so our time is limited during the week. We try to meal prep as much as possible on the weekends so that all we have to do during the week is heat up dinner. One of the best ways we’ve found to prep our meals for the week is our slow cooker! We’ve used it for at least one meal a week for the past month or two. Slow cookers make life so much easier!
This slow cooker chicken taco recipe comes together so easily and only has nine ingredients! The chicken cooks perfectly in the slow cooker and almost melts when you shred it. You don’t even have to use the shredded chicken in tacos. You can use the chicken in soups, sandwiches or even chicken salad! Once you pull together all the ingredients, the possibilities are endless.
If you do make tacos, then make sure to use homemade tortillas! I added a little sour cream, salsa and cheese and was good to go!
Slow Cooker Chicken Tacos
- 1 1/5 lbs chicken
- ¼ cup lime juice
- ¾ cups orange juice
- 4 cloves garlic chopped
- 1 teaspoon cayenne
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon salt
- ½ teaspoon pepper
Place chicken in slow cooker with lime juice, orange juice and spices. Cook on low for 6-8 hours.
When chicken is fully cooked, shred chicken with two forks.
Serve chicken on tortillas with desired toppings.
