So, I totally meant to post this recipe last week. Somehow, the week got away from me and before I knew it, it was Friday. Then, I meant to post the recipe on Friday night. It didn’t happen. So I opted to wait to share this slow cooker shredded aloha pork with y’all this week. Maybe I’ll get ahead of the week since I’m posting on Monday? We’ll see!
Does that ever happen to y’all? Not necessarily with a blog, but just in the regular course of life. I have the best of intentions to get something done at the beginning of the week and then it never happens. Life gets in the way, work gets in the way and watching Netflix sounds so much better.
But that’s exactly where this slow cooker recipe comes in! The best part of using the slow cooker is that there is so little work. It’s a set and forget situation. All you have to do is prep the ingredients, pour them in the slow cooker, turn it on and wait! It’s the perfect solution for weeks when you procrastinate.
I feel like this shredded pork is the definition of umami flavor. It’s salty and tangy from the soy sauce. It’s just a little bit spicy because of the red pepper flakes. And the brown sugar brings it all together with some sweetness. We served this shredded pork with rice and grilled veggies. It was like a plate of summer!
Slow Cooker Shredded Aloha Pork
- 1 20 ounce can pineapple chunks in natural juice
- 1/4 cup brown sugar
- 1 tablespoon apple cider vinegar
- 1 tablespoon soy sauce
- 2 teaspoons curry powder
- 1 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes
- 6 bone in pork chops
- salt and pepper to taste
- 1 tablespoon water
- 2 teaspoons cornstarch
Pour the pineapple with it's juice, sugar, vinegar, soy sauce, curry powder, ginger and red pepper flakes into the slow cooker and stir to combine. Season the pork chops with salt and pepper. Nestle them into the slow cooker, making sure to cover them with the pineapple mixture. Cook on low for 6-8 hours or 3-5 hours on high.
Once cooked, remove the pork chops from the slow cooker. Remove from the meat from the bones first and then shred the meat.
Remove fat from the liquid in the slow cooker and then transfer to a saucepan. In a separate bowl, combine water and corn starch and then add to the braising liquid. Cook over medium low heat for 10-15 minutes until thickened.
Pour the braising sauce over the shredded pork and serve as desired.
